I made dinner for my mom & her friend tonight!
It was this AWESOME fettuccine and Caesar salad! Yum! I made the croutons and the dressing for the salad..w00t.

So, what did y'all have for dinner this wonderful saturday night?

7. Italian pork chops, garlic dill red potatoes, and green beans
Then went to the church bazaar and had.....FUNNEL CAKE!! Perfect end to my day!

18. here it is:
it isnt my recipe, it's from a cookbook (thats by the local people), but it's still really god. hope I won't get sued for copywright or anything... :P

vinagarette:
1 egg
4 tbsp fresh lemon juice
1 tbsp minced garlic
1 tsp Worcestershire sauce
1/4 tsp red pepper flakes
1 tbsp Dijon mustard
2 tsp anchovy paste
3/4 cup peanut oil
1/4 cup E.V.O.O (channeling Rachael Ray here... :D :P :rofl: )
1/4 cup of parmesan
salt & pepper to season

-whisk together all ingredients but the oils, cheese salt & pepper. Whisk the oils in. then add cheese, salt & pepper.

crutons
1 loaf of day old bread (sourdough. just tear bite sized pieces off.
1 cup of E.V.O.O. ( :P )
1/2 cup parmasan
2 tbsp minced garlic
1 tsp fresh oregano (chopped)
1 tsp fresh tyme (chopped)

-preheat oven to 350 degrees
-combine all ingredients exept for bread.
-toss in bread & put on ungreased cooking sheet.
-put in oven for 15-20 minutes or until golden brown

I just had a homemade wrap - garlic roast beef, cheese, onion, tomato, and a salad. Add a couple of macaroons for dessert.

11. Thai food--but!!
We are having our homemade blackberry pie in about a half hour. Seabob, Daisy and I picked the b'berries, then S'Bob and I made the pie. (Daisy is our German shorthair pointer.)

13. Can I come to your house for dinner?? A little blackberry pie story...
Before my wife and I were married, I took her back to upstate NY to meet the family and friends. We were invited to dinner by one of my friends from high school. When we finished eating, my friend announced that we were having fresh blackberry pie for dessert. Neither my wife nor I were that excited about blackberry pie, so we asked if we could split a piece.

So, we get the pie...she takes a bite...I take a bite...we both look at each other and she says, "This is the best pie I have ever tasted." (I agreed.). My wife then says, "Uhm -- could I have my own piece of pie?"

My friend and his family used to own a diner and his Mom made all of the desserts. His mom made this pie and it was amazing! To this day that is one of the best pies I have ever tasted.

PS: I love Thai food, also!!

14. I prepared spare ribs and chicken for the family tonight.
Actually, my son and I drove down to the local market and picked them up. They grill them every Saturday. We also had potato salad, peas, and biscuits.

15. Fried Dumplings with wasabi
Tossed field green salad with balsamic vinaigrette, prime rib (medium) with Bearnaise sauce
baby carrots and green beans, and red potatoes. Washed down with Coronas.

23. I made up a little pasta dish
Whole wheat noodles with garlic, cucumber, tomato and baby yellow squash sauteed in olive oil. I cut up a cooked chicken breast into it and tossed it all together with parmesan cheese. I was impressed with myself, especially since I was only cooking for myself and managed to cook a perfect portion.

my usual dinner.... have to cook healthy, DH had a heart attack in June...
I put a can of diced tomatoes in with an infused garlic oil along with peppers and green squash and green onions
Made some with shallots and mushrooms the other night. Love the whole wheat pastas!
no cheese though. I pick up a couple of grilled lemon chicken breasts from the deli dept. its allot easier than cooking the chicken

27. Didn't cook tonight
Just some fresh cucumber salad and tomato salad, both from my garden.

But last night I made this funky thing.

Stick with me here:

Turkey kielbasa, a couple onions, a red pepper, a green pepper, some carrots from my garden, several potatoes cut into small chunks, some long beans from my garden, and I think that's it.

Then I chopped up a bunch of garlic in my food processor, put in some oregeno and thyme, also from my garden, chopped that up, then some salt, freshly ground pepper and a bunch of paprika. Then some olive oil. Mixed that all up and covered all the other stuff.

Then I threw it all on my grill. Served it with some more of the aforementioned salads (eat those all the time since the garden is doing well) and damn if it was good!

MrG is out and about. Now...I'm overstuffed and sleepy, and grateful my daughter can now drive everywhere. She's been a big HELP this week! :hi:

31. I made a pasta dish tonight.
It was pasta with fresh chopped tomatoes. The tomatoes and basil came from our garden. The other ingredients included:

Three tomatoes- I used four/ two red and two yellow
1/2c fresh basil, chopped
two cloves garlic, finely chopped
salt and pepper to taste
1/4c grated Parmesean cheese

Cook pasta as directed on the package

In a large bowl, combine the above ingredients

After draining the pasta, add three tbsp of butter along with the tomato mixture
