You need: 2-3 tablespoons of machaca (shredded dried beef, unflavored beef jerky will do in a pinch) 4 corn tortillas 3 eggs olive oil some onions some tomatoes one serrano pepper (jalapeño will do, if there's no other choice). salt and black pepper some hot sauce (I prefer Valle de Mexico fire roasted salsa).

If the machaca is in whole pieces, cut it into strips across the grain.
put the eggs in a bowl with the salt and pepper, and beat them.
Cut the tortillas into one inch squares and fry them in oil until light golden brown. take them out of the oil and set them aside.
Cut the serrano peppers into rounds (one quarter pepper per egg), the onions into inch squares, and cook them together in the same oil until the onions turn translucent.
Drop the tomato in, cook it a bit to boil off some of the liquid, drop the eggs in, stir them a bit, drop the tortillas in, turn the flame off, stir them together a couple of times then cover them. The heat from the iron skillet will be enough to finish the cooking process.
Put the contents of the skillet on a plate, add salsa to taste, and enjoy!
