It is 10:35 PST and i am about to take 2 loaves of bread out of the oven,.
It smells awful good in here......i probably did something wrong....

It will be heavy...or have a too hard crust. Or something.

I want to be a good baker...really i do....but...well....i am not.

I just keep trying.

BTW....i didnt win the lottery, either.

2. 4 cups white, all purpose and 2 cups whole wheat.....
3 eggs, butter, milk and beer for the liquids....should be ok

4. you sound like me...
i am always dead certain that i have killed the yeast or that i pulled it out too early or left it in too long or done *something* that's gonna ruin the effort. so far i have managed to ruin exactly one baking episode. that was my first try with a recipe that was all mine. i tried to include some almond butter and orange marmalade (to make an orange/almond bread...) and came up with a braided doorstop instead.

fwiw, since i started letting the kitchen-aide do most of the kneading my bread seems to come out better. i think i tend to add too much flour to keep my hands from sticking to the dough?

pass along your favorite recipes, please.
