Cast iron is the best. Mine is my favorite pan. It's about 70 years old and still going strong. I make my eggs in it every morning.

Don't scour the thing, either. Just boil out the nasties and throw the water away. Reseason with oil (I use olive oil) and you're good to go again.

21. I also re-season my skillet.
Martha Stewart has a great approach. Use Kosher salt and oil....put into skillet liberally.(pour)...place in warm over...say 250 degrees....... keep in in there for several hours...cool; wipe out with paper towel.

4. We love ours too
We use it all the time. When I had anemia earlier this year, I cooked spinach in it every day. My doctor was amazed by how quickly I got better.

That skillet will last forever - enjoy it in good health!

6. Cast iron rules!
About the only thing we have trouble cooking in our skillet is eggs (the skillet is a year old and not quite non-stick, but it's getting there).

And the best thing? NO TEFLON!

YES!! no teflon, none of that horrible teflon/non-stick coating!! :bounce:

I've seasoned it twice today!! I scoured it(like it said), spread shortening all over it, and baked it. !!

it's a nice deep brown already. :bounce:

11. I think you're supposed to season it first
Does anyone else know? I have one over 50 years old and it makes great cornbread.
After you wash it, make sure to coat the inside with oil (spray on does good) so it doesn't rust.

I wanted some new kitchen odds and sods and I got some new utensils, some dish towels and placemats,etc. as part of my Christmas gifts. :evilgrin:

Got a new country cookin' cookbook, too!! "Santa" was very generous to me this year. :)

She said women get a lot of the iron they need by using cast iron cookware. There was no iron deficiency in women when cast iron ruled in the kitchen, according to her.

16. Yes, you get more iron in your diet cooking with cast iron
And in my experience it's the only thing you can use for proper cajun blackened meat. You heat it up in the oven first, then when it's good and hot you take it out and put it on the flame. Awesome...

17. I've got one but hardly use it
for no good reason. ACtually, I dislike the teflon coated skillet that is all warped up and whose telfon coating is all scratched up. Someone told me never to wash the iron skillet out--but to swipe it out with alcohol instead. :shrug: Is that a good practice? I know to coat it with oil and then bake it. But is it true to never wash it? Only swipe it out with alcohol?

18. Season it with...
Peanut Oil. Peanut Oil has the highest flash point of all the oils, which makes for the best seasoning layer going. Do not use Alcohol, period. It is a solvent and will remove the seasoning. Use hot water and a green meanie to scrub it. No steel wool, no soap. Once you are done cleaning it, heat the pan, pour in a small amount of peanut oil, spread it around with a wadded up paper towel, wipe out and leave a coating of oil on it.

20. Wash it
I wash mine the normal way with dish soap. Wash them by hand only, not in a dishwasher. I've never heard of using alcohol but it sounds like it would remove the seasoning and I wouldn't try it.
