I'm a Yankee, and we like seafood with minimal assistance. I use minimal mayo and crumbs to hold the cakes together, but a crab salad with Old Bay and dressing is sublime.

35. I prefer a little mayo to an egg as a binder, but the beauty of crabcakes is
there are many, many ways to make good ones. The mayo helps cut down on the amount of crumbs in the filler -- pretty much all of the crumbs are on the outside. I don't use those fancy coarse cut panko crumbs either --old fashioned white bread fine crumbs.

32. 1. Mix Old Bay seasoning and cheap coffee. 2. Brew in office coffee pot.
3. Start small (2-3 tablespoons of Old Bay per pot of coffee).

4. Slowly, over the course of the summer, up the mixture until it is almost 50/50 Old Bay and coffee.

5. Wonder why no one in the office seems to have noticed, or asks why you bring your own coffee in every day.

The above is true, and was done about 20 years ago during a summer job.
