We had the BEST breakfast this morning..

I had purchased some onion/cheese rolls at the grocery store the other day. They were on the 1/2 price table (you know, the day old stuff). I bought them because they looked really good, but I didn't have a clue what to eat them with. Well they've been sitting on my counter getting staler by the moment so finally last night I had a brainstorm.
I sliced them into "wafers" and lined a sprayed baking dish with them (4 rolls). Then I sprinkled a little bit of cheese on them (I had some shredded sharp cheddar and a little Parmesano Reggiano.) I mixed 4 eggs with some milk (maybe a cup?) and a dash of dry mustard, a little salt and some cracked pepper and poured it over the top. I let it set in the refrigerator and this morning baked it at 350 for I guess about an hour-I put it in the oven right away when I got up and it was ready when everyone was dressed and ready for breakfast. It puffed WAY up, nice and golden brown on the top and was sooooo yummy.
I've made this same casserole-souffle thingy before, but always just used plain bread with it, and it was okay (kind of blah) but let me tell you, I would buy those rolls again JUST to make this. It was outstanding.
