I had the best supper tonight (What did you have?)
one of my favorite summer suppers:

tomato sandwich and an ear of corn on the cobb.





I'm in heaven.

1. i picked up a Salad Nicoise at Trader Joe's, yummy and low cal and low fat.
and for tomorrow night i picked up a thai noodle salad with chicken and peanut sauce, also low cal, low fat and high protein.

Trader Joe's is my favorite place to shop for groceries.

I had pasta and meatballs with marinara sauce. It was good.

14. that sounds really good. We walked out of there with a full bag and it only cost
$22, i really love that place, the quality is always good and so are the people that work there. The salad was very good btw so that one gets a thumbs up, the dressing was very light, i'm guessing it was Dijon mustard, lemon juice and maybe some cilantro, tomorrow night i will be eating the thai noodle one, cannot wait.

7. I haven't started yet, but I did go to get all the ingredients

I rescheduled for the 26th (thanks to DS1's suggestion). Whew!

I spent my day driving and hanging out in the hospital with Dad and Mom. Ugh.

Were they fried tomatoes? :shrug: I love those.

I had Arby's at the mall. Not the best meal but we were on the go and had to get something quick.

on a whole wheat bread (really grainy and nutty bread--it was awesome), toasted, a swipe of mayo and salt and pepper.

28. Nope, not quite.
Mandarin oranges, crushed pineapple, slivered almonds, cottage cheese, marshmallows, whipped cream and powdered orange jello.

Drain the oranges, pineaplle and cottage cheese. Whip the powdered orange jello into the whipped cream. Fold all ingredients into the jello/whip cream mixture then chill.

Ever had a Watergate salad? It's similar to that. If you like Watergate salad you'd like this.

20. we made a lovely pork noodle soup from a Weight Watchers
cookbook.

wide rice noodles
shredded leftover pork tenderloin
assorted julienned veggies,
ginger, garlic chiles
vegetable broth as the base.

quite good.

21. Bean 'soup' and leftover rice
I had pre-soaked and pre-cooked the pinto beans the last couple days while having something else for dinner. Tonite I just added finely chopped onion, shallots, garlic, green pepper, and celery and some organic taco seasoning and some non-organic taco seasoning. Topped with some big pats of butter and a whollop-dollop of Knudson's Hampshire sour cream.

Looks like it's tomorrow's dinner too . . . .

25. Lamb shank stew
2 lamb shanks that were browned in butter/olive oil
5 diced cloves of garlic
a large bowl of roughly diced mirepoix (celery, onions, and carrots)
32 oz of chicken broth
enough water to cover the shanks
salt
crushed cardamom pods placed in a tea ball and allowed to steep in the stew halfway through
cilantro added at the end as a garnish

browned the shanks, put in the veggies and let them cook on high for a little bit, then put all the liquid to cover, let it boil, turned the heat down and partially covered, and 1.5-2 hrs later it was done :9

29. Grouper Ponchartrain
Grilled grouper topped with a soft-shelled crab and Hollandaise.
At a place down in Orange Beach called Louisiana Lagniappe.
Very good, but a bit pricey.
Splurged with some vacationing friends from upstate.
