What's your favorite way to cook eggs?
GoPSux got me to thinking about it...I'm really torn between scrambled, sunny side up, and hard boiled. I'm leaning towards hard boiled, b/c it leads to egg salad. :9

What say you? :hi:

22. Low heat and lots of movement.
Also - turn off the heat a little bit before the eggs are done. The remaining heat in the pan and within the eggs will finish the cooking.

If you whisk a little water or milk into the eggs before pouring them in the pan, that helps with the fluffiness too.

I love the egg, but I must admit that an egg fried in oil is the best, IMO. There is a science to it so that it is not one big greaseball, but done correctly, it is heaven.

Little MB likes them this way too. When our house was on the market, I hated to make them because of the splatter mess, but I haf to give in to her little puppy dog eyes every once in a while.

46. Over Medium, On Top of Enchiladas
I'm not kidding...it sounds disgusting, but it's the best, Jerry...The BEST. I was in a hole in the wall Mexican joint, and the menu had Enchiladas as normal...and then I notice it: "add eggs - $1.00". I asked the waitress...WTF does this mean? She explained that eggs over medium would be added as a topping to my beef enchiladas. I said why the hell not...and had the best enchiladas I ever tasted.

*My wife apparently prefers her fertilized...

59. Fried egg sandwich
One carefully fried egg (low heat) on two buttered slices of toast with hot pepper cheese and Frank's Red Hot Sauce. I like Frank's a little better than Tabasco because it has a little more flavor, IMO.

Washed down with hot chai :9

Now my husband sometimes wants a scrambled egg sandwich or what he calls "Dippy Eggs" - fried eggs with a soft center that oozes out to dip his toast into.

Then there's my Mom who makes pickled eggs. She boils them, peels them and then lets them sit in beet juice until nice and pink. Not at all my favorite. x(

OMG!

My fave way to heat the un-fried tortilla (must be corn for this) is to sprinkle both sides with water (I just run it under the faucet) and then throw it in an ungreased frying pan on medium heat for maybe a minute each side.

Salsa should of course be home made and contain cilantro.

Truly, it is out of this world good.
