What's for dinner?

I'm making stuffed poblano peppers, drunken grilled shrimp and jicama slaw to be served with Waboritas (tm). I'd like to thank the Food Network for making this all possible -- Guy, Bobby and Emeril. So far it smells like heaven in my kitchen.

ETA: I forgot to thank Alton for the grilled pineapple that will be desert. It's New Beau's birthday. Wish me luck with this.

6. I just made some yummy eggplant parmigiana

It's from a Cook's Illustrated recipe and it turned out really well. It's crispy and not all limp. Here's a pic taken right before we dove in:
