I started on a healthier lifestyle last year, pizza has become my #1 crave. I thought I'd miss things like ice cream, pasta and other stuff way more but I really don't miss them at all. I've had one scoop of ice cream in the last 14 months, and I shared it with my husband. It was delicious, but I'm not dying to have more. And I have pasta once in a blue moon but I rarely *crave* it.
But pizza, oh dear maude. I feel like I could eat it every day and never stop wanting more. I usually make it myself with this extra thin whole wheat pita from a local bakery. It bakes up in the oven to the perfect flat-bread crispiness. I usually top it with fresh tomato, olive tapenade, goat cheese, fresh basil, asparagus, roasted garlic, chicken, and some good parmesan. Or sometimes just olive oil, tomato, and bacon bits or prosciutto. When it comes out of the oven I let some fresh arugula wilt on top. Holy boy it's delicious.
Every couple of weeks I just have to have some ultra-thin pizzeria pizza. Thankfully Chicago has finally caught on to the fact that there are other options besides deep dish (too much for me) and it just so happens that two of the best places for thin crust are walking distance from my house.
I'm going to Italy in October and I'm glad we'll be doing a lot of walking because I'm thinking there is going to be some kick-ass pizza in my future.
