He called me on a break at work and he was cooking some simmered pork chops.

In case you hadn't guessed.




He was talking about rosemary.

Would you have wound up having pork chops for dinner that tasted like a Christmas candle?

I also recently asked him to pick up some loose-leaf sage at the local health food store, where they sell hundreds of spices in bulk.

I said "Not the powered, not the rubbed, but the stuff that's more or less intact."

He said, "You mean the stuff that looks like pot."

4. It's pretty simple really.
Some water in the pan.

A little sliced garlic & ginger, a couple tablespoons of Worcestershire.

Gr. pepper & rosemary.

Cook at a med temp until chops are done and the water is reduced to a glaze coating the chops.

8. You should try this recipe while apple cider is still in season

I make it at least once every fall. I've never made the creamed leeks, but I like to make the sauteed granny smith apples. I never have calvados on hand, so I substitute white wine or sherry.

It has a really unique flavor.

But it is written down. And not in a link.

I'm too lazy to go look for it and copy it now.

12. Yucatan Roast Pork
First - Grind this together

1/2 t peppercorns
2 cloves or (1/2 t gr cloves)
1 all spice berry or 1 pinch all spice powder
1 pinch oregano
6 T gr annatto/achiote Hispanic section of supermarket

Combine with

1 T salt
1 garlic glove crushed
1 T white vinegar
1/4 cup water

(This mix can e refrigerated for several months)

Mix together:

2 Heaping T of above
1 cup Orange Juice
1/2 cup Grapefruit Juice
1/2 cup Lemon Juice
1 T Salt

Mix with:

5 lbs Pork butt or shoulder
Cut into large chunks

Marinade:

Several hours. Turn.

Bake:

350 3 1/2 - 4 hrs
in heavy casserole.

Serve with Pickled Onions.

1 LG Red Onion Diced.
2 1/2 T W Vinegar
1/2 T salt
3/8 cup water
Marinade 2 hrs.
