12. Cut into bite-sized medallions and grilled until firm.
Then lightly covered in an herb sauce. Usually Parsley. Though a good pesto works too. :9

14. I think you'll be very pleasantly surprised.
Everyone is used to cooking up a yam paste. I can't stand mashed yams. But when you serve them firm they have an entirely different taste/texture.

They are a bit on the dry side, of course. But that's just like roasted potatoes. If you serve it with a sauce then it soaks it up and isn't dry anymore. :9

16. Mashed and lots of stuff added.
Mash, add melted butter, vanilla, brown sugar, couple of cans of mandarin oranges and chunks o'pineapple. Mix up thoroughly. Bake for a while.
Take out, put layer of large marshmallows on top, stuff back in oven on BROIL, and watch carefully to make sure they don't burn!!!

YUMMM!!!

I think this is a southern thing. It's a veggie, it's a dessert, it's good for you!!!!

peel, mash
OJ, cinnamon, nutmeg,brown sugar, OJ and butter
all together... to taste.... spread in pan- I use a pyrex 9x12 glass pan
Marshmallows (big ones) on top
bake 325
for an hour or until marshmallows are golden brown

And you do know that they are not truly yams, don't you? All of the varities we get in the U.S. are really sweet potatoes. The yam is something entirely else.

I like them peeled and baked with some heavy cream and smoky chipotle for a little kick. That's a Food Network recipe.

I used to like them baked with the skins on and then split and dressed with butter and a bit of orange marmalade. But now I think they are sweet enough alone. They really are.

after being rubbed with olive oil and sea salt.

Fairway Supermarket in Manhattan has the most amazing sweet potatoes I've ever had - gigantic sonsabitches that are goddamned brilliant with just a coating of olive oil and salt, baked until done, and then just dig into 'em. Fucking fucking delicious.

Have made this several times...one of the best!



INGREDIENTS

* 4 large yams
* 3 tablespoons butter
* 1 tablespoon cornstarch
* 1/2 cup packed brown sugar
* 1 1/2 cups apple juice
* 1 tablespoon lemon juice
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground allspice
* 3 large apples - peeled, cored and sliced


DIRECTIONS

1. Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
2. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
3. In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
4. Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
5. Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.


YUM!

But this year have been requested to make my famous maple cinnomon baked apples.

And those of you who have had this treat know how yummy it is! :hi:

25. My sister makes a really good one that is whipped and then baked
I'm not sure what she puts in it, but it is sweet, has a few spices, and has a light, fluffy, creamy texture. I never liked yams much until I tasted that recipe. I'll have to ask her for the recipe.

26. my pie recipe
I found a lot of recipes online and used them to make my own. I am not a cook so it was a big deal.
I made two of them this morning!


Sweet Potato Pie

1 uncooked pie shell
1 cup sugar (I used brown sugar this year)
1/3 cup melted butter (almost a whole stick maybe)
2 cups (about) of mashed sweet potatoes
2 beaten eggs
1 teaspoon vanilla
almost 1 teaspoon nutmeg
1/2 teaspoon ground cloves (or not)
½ teaspoon cinnamon
¼ teaspoon salt
¾ cup evaporated milk (start with a little less, adjust for runniness)
crushed pecans

Boil potatoes (45 minutes) peel

Mix up sugar and melted butter
Mix in potatoes
Mix in eggs,
then spices (vanilla, nutmeg, cinnamon, salt) (cloves)
Mix with milk
Mix mix mix, batter should not be very thin (a little runny is okay, it’ll stiffen up) add the milk until you think it’s right

Pour into crust and bake at 425 degrees for 15 minutes
(After a few minutes & before the top gets hard, sprinkle pecans on top)
After 15 minutes reduce heat and bake at 350 degrees for 35-40 minutes

Let cool one hour


maybe
1/3 cup honey to take the place of some sugar?
