25. use part chicken stock and part water for cooking. Leave skins on. Yukon Gold potatoes
are the best. Cook them down til there is very little liquid left. Mash with hand masher, add butter, salt, pepper and milk if needed.

I also add a little fresh garlic when cooking. salt/pepper to taste.

9. Nice double entendre.
I suppose that DU's Swede can be mashed but this type is easier:

a PSA for Americans who don't know that what we call a rutabaga is called a swede on your side of the ocean.

26. the secret to good mashed potatoes...
...is to simmer them, not boil. When you boil potatoes, the outer part sheds off in a watery layer that will make your tatoes watery.

THEN, after you drain them, put the pan back on the burner for a moment to dry up all excess water.

NOW you can mash them.

I use butter, sour cream, half & half, and for eating with beef, some horseradish. Delicious.

27. Very little
I just mash them with a little milk.

After all, I intend to put gravy on them, so why use a bunch of other stuff like butter that just increases the fat content?

(I would rather just mash them with a fork on my plate, but for some reason that isn't acceptable to my spouse.)

29. Keep them lumpy.
Add a lot of butter, some sour cream and half-n-half. Salt and pepper to taste. Then a little garlic and mixed-in shredded cheddar. Then bake for about 15 minutes.
