The beans seem to taste better with the all day slow cooking. Now all I have to cook is some cornbread, and make some ice tea.

2. I have oak and pecan wood, lots of it.
To many old trees are being cut down in my neighborhood, I get the wood for free. I like mesquite but I like to mix it with pecan wood.

3. I miss the days spent as a ranch hand
I miss taking gobs of mesquite sap and tossing them in the camp fire. Watching them puff up to the size of your fist, and taking them out to eat. Like eating cotton candy flavored popcorn... I miss cooking on an open camp fire, when the only wood around was mesquite. I miss Texas; I surely do.

4. Just think, at one time mesquite trees were hated.
Just cut down and burned. I miss living the country, the city doesn't seem like Texas to me.
