1 Skinless Boneless Chicken Breast
1 Andouille Sausage
1 cup chicken stock
1 cup (dry) Cooked brown rice
1/4 lb cooked, deveined, shelled shrimp
1/2 cup chopped okra
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup yellow onion
1 tbs olive oil or grapeseed oil
1 tsp cayenne, garlic powder, gumbo file, paprika, pepper, salt, celery seed or celery salt (if celery salt, omit salt)
2 bay leaves
1 8oz can of tomato sauce

Cut up chicken breast, vegetables (except okra) and sausage. Fry in a saucepan with oil. When chicken is browned, add chicken stock. Bring to a boil. Add seasonings. Add rice. Cook for about 20 minutes, stirring. Add okra and shrimp. Cook for another 5-10 minutes. Add tomato sauce and turn off heat. Let stand for 10 minutes. Eat.

1. Scotch eggs
Scotch Eggs

6 hard-cooked eggs, well chilled
1 pound breakfast sausage (spicier the better for my taste)
1/2 cup flour
2 eggs, beaten
3/4 cup fine bread crumbs
Vegetable oil for frying

Peel eggs and set aside. Divide sausage into 6 portions. Roll each egg in flour and with hands press a portion of the sausage around each egg.

Dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat vegetable oil to 350 degrees Fahrenheit.

Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper toweling. Serve warm.

2. Noodle El Toro
Egg noodles, real chili (no canned crap), hot peppers (yellow looks pretty!), and hot sausage all mixed together and covered with melted cheese.

Keep both drinks and the doctor's phone number handy.

4. trof's Scotch & soda:
1. Fill a double old fashion glass with ice.
2. Pour in 1 1/2 to 2 ounces of Scotch whiskey.
3. Fill glass to within 1/4" of rim with club soda or seltzer.
(Your choice. Club soda has sodium. Seltzer just has bubbles. I actually use seltzer.)
5. Sip while posting on DU.
