What are you having for dinner?
We're having Warm Lentil and Tomato Salad:

Boil 3 c. water, add 1 c. Lentils, 1 diced Carrot, 3/4 tsp thyme, 1/2 tsp. salt, 1/2 tsp. pepper

Cover and simmer 25 min or until tender

Drain, toss w/ 3 tbsp red wine vinegar, 1 1 tbsp olive oil, 2 tsp Dijon, 2 c. diced tomatoes, and 2 tbsp. diced scallions.

Serves 4
