Cooking substitute for fresh ginger
What should I use the dried powder ginger or some crystalized?
Its for a soup if that matters

or you might be able to find small jars of ginger paste that work very well.

But why substitute? Fresh ginger is so good and so cheap and it really isn't that hard to work with.
