Ground cumin is a great spice!
I just had some cumin sauteed scallops, with minced garlic, and parsley in broth for lunch. :9 Yum!

I'm going through a cumin phase these days... :hi:

did you happen to hear that Dale, from the last season, hooked up with the cutie from this season's Project Runway (his actual name escapes me, but he's the one that had to leave early due to his mouth sore)

We're big Project Runway fans, too. :hi:

I'm trying to drop some weight and have been eating nothing but veggies and proteins for almost a week. It's been good to cleanse out a bit.

11. My Pleasure
1 Pkg (20 oz) ground turkey
1 cup chopped onion
1 cup chopped green pepper
1 14.5 oz can of Diced tomatoes (undrained)
2 15 oz cans of Great Northern Beans, drained and rinsed
About 25 ounces of Tomato or V-8 juice (you can control the liquidity here)
1 tablespoon of chili powder (at least one tablespoon)
1/2 teaspoon ground cumin (a little goes a long way)

put turkey, onion and green pepper in large saucepan. Cook and stir over medium heat until turkey is crumbled and no longer pink. Stir in everything else, bring to a boil and let simmer for 20 or 30 minutes (or longer.) This is a rather large amount but the leftovers are awesome, seems to get better with age.

Very nice indeed. 1 tablespoon of chili powder wasn't enough for me but as they say, season to taste.

Great Northern are a kind not a brand. Like Navy Beans or Chili Beans. I don't know about the dry but I bet you could find them in that grocery Isle. And I don't know of the difference in cooking requirements of the two types (canned v dried.) Yes, it was fairly simple and my wife was very happy with the final product. I do good about one out of every 20 recipes I try. Lord do I screw things up in the kitchen.

the ultimate diplomat, would console me when I messed up a recipe and she told me I was trying recipes that were too complicated and trying too hard to please. Lord I was my own worse critic. She said just try simple stuff and it will be great. Of course she was right.

yes, I've heard the "Yes, Dear" advice before. It works like a charm, indeed.

MrShine and I will celebrate 15 yrs this coming June. :loveya: He's a keeper, too.

We're trying to decide if we want to do a big splurge romantic solo trip away vs. saving some dough and keepin' it on the light side by going off camping alone somewhere. We'll see....

It's great to have the stability of a long-term loving marriage, doncha think? What a huge blessing.

34. We are planning a kinda of a culinary trip for our next anniversary
A visit to Avery Island Louisiana in April, the home of Tabasco Sauce. Its Disney World for Hot Sauce Lovers. A stable marriage is one of life's greatest pleasures. She's not only my Wife but my Best Friend and she knows better how to take care of me then I do. I certainly don't deserve her. Hope ya'll have a great anniversary. Several years ago we went to Club Med in the Bahamas. Wow. What an awesome way to spend a week.

43. Greath Northern beans: yes, you can get them dry.
Out here though it's easier to find dry Cannelini beans. They're similar to Great Northerns in size and color.

45. I use turmeric for that, and cloves, and occasionally almonds
I may try cumin too. Rice is so much better cooked with spices.

29. If you ever needed a refried beans recipe, I use this one with cumin
(and I grind it in an old coffee grinder, so that I get the best flavor of cumin spice)...

4 cups dried pinto beans, soaked overnight, drained several times, covered with water and boiling a few hours so that you can mash them after draining

(separate skillet)
3 cups chopped sweet onions,
4-6 TBS canola oil
5 tsp cumin
kosher salt to taste
1 large bell pepper chopped
freshly ground pepper and more salt as last step

Soften the onions, then salt and add cumin. Add chopped bell pepper, cover 5 minutes till all is softer. Mash the beans and add this mixture. I also make a hot sauce in which I use lots of cumin, then I top my burrito with that sauce and these refrieds. Lots of left overs...

37. It goes great with squash. Try roasting cubed butternut squash and yams

with a mix of brown sugar, cumin and cinnamon. Toss them with olive oil, add some whole garlic cloves and quartered red onions to the roasting pan, cover and bake for about 20-30 minutes. YUM.

Edit: yeah, salt, pepper, blah blah blah, you know the drill. A healthy dash of cayenne also works nicely.

40. Another reason to always use whole spices :)
On the other hand, cumin, cayenne and cinnamon are a great combination for sweet desserts. The taste is a bit more sophisticated than people expect, but still delicious.

it's the main feature in my easy marinade for chicken breasts - just olive oil, S&P, chopped garlic, and cumin. The chicken is great for tacos, salads, or anything else.

An Indian friend gave me some roasted cumin - it's cumin on a whole other level, and the smell is irresistible! :-)

48. For a saute, consider whole cumin: begin by sizzling the seeds for
a few minutes in a bit of reasonably hot oil (or melted butter) -- just hot enough and long enough to ever-so-slightly brown them. The oil will pick up the warmth of the spice. Then don't remove the seeds: just go on with the saute

53. I love it, but have to ration it to my boyfriend when he cooks.
He REALLY loves cumin, so much so that he thinks tons of it should be incorporated into everything he cooks. The standard reaction of friends when he cooks is "ummmm...cumin-y!" :rofl:
