What's cheap and easy that I should make for dinner tonight?
I was going to throw together a casserole for dinner, since my roommate and I are both stranded away from out families for Easter and Passover (which isn't for a while, I grant, but if I don't cook this weekend, I'll go crazy), but that seem sa bit lazy. Suggestions?

3. Mmmmmm, grilled cheese and tomato soup.
Sourdough French bread, buttered on both sides and filled with asiago. Amy’s tomato soup, topped with fresh basil. It really doesn’t get any better.

2. a roasted chicken
Put some butter and herbs under the skin, if you have lemon juice or a lemon give it a squeeze over the top, and throw it in the oven. You could use chicken thighs if a whole chicken is too expensive.

Roast two sweet potatoes along with the chicken. Or you could use baking potatoes, or some other kind of root vegetable. Carrots, beets, whatever. Roasted sweet potatoes are great with many toppings. Be creative.

A simple salad of any kind.

You could make some muffins or biscuits to go with. They are cheap and delicious.

Oh, how about some deviled eggs?

Or, you could go a whole other route and make an oven omelette or frittata (eggs are so very easter!) and have with salad and garlic toast.
