Roast for dinner. I hope I'm doing this right

Roast for dinner. I hope I'm doing this right
On my restricted diet due to food allergies, my food consists mainly of veggies, sushi and oats. Lots of oats. To paraphrase Jim Morrison, "I eat more oats than any man ever seen." I've tried to get away from beef, but I'm ravenous for something different. So:

A 2 lb. chuck roast, seared on each side for 15 minutes. (My stepfather tells me this will help lock in the flavor.) I've made several small holes and inserted chopped cloves of garlic and some small shallots into the roast. Into the pot it goes, along with:
Sweet red onions
Carrots
More shallots
2 Tomatoes
Six small finger-potatoes
Some sliced red and yellow peppers
A handful of white mushrooms

And 3 bottles of Michelob Amber Bock. (I'll have to add more later, but the pot is full for now.) I drink cheap beer, but I wanted something semi-respectable to cook with. (I used to buy Guinness, thinking I'd cook with it, but I didn't really have the heart to use it that way, and usually ended up drinking it instead.)

Deep down, I think I know I have to give up meat someday. But there are so few foods I can eat anymore, and beef is one of them. Three days of tofu and jasmine rice has made me weak with hunger.

What are you having tonight? What manner of food and libation? Let me live vicariously through your taste buds. Regale me with tales of gustatory pleasure. I don't care if you're a gourmet or a gourmand.

1. Tonight's supper: hummus wrap with fresh veggies
Spinach, diced cucumber, diced red pepper. WONDERFUL

I make my hummus with lots of lemon juice, some cumin and a bit of dried hot pepper.

I wonder if I can still eat hummus? I haven't had any lately. I'll have to try that and see.

3. If you can eat the chick peas, make it yourself
and only put in seasonings you tolerate and like. It freezes well so I make a big batch (3-5 dry pounds of chick peas) then divide it into half pint or pint containers to freeze. We find it is satisfying in summer without being heavy. Works for lunches when Havocdad has to spend the day doing field work. I put it in his little ice chest with some fruit, crackers and ice. Not as much worry in warm weather as a sandwich with meat and mayo.

Have also made a bean spread with cooked white beans and LOTS of fresh cilantro. Yummy and good for us.

Can you eat eggplant? Always found things made with that were satisfying when I couldn't eat meat. Hot with other veggies in casserole or cooked, mashed, seasoned and chilled as a spread. Always gets rave reviews from dinner guests.

4. Excellent ideas
I should be okay to eat eggplant. And yes, light meals are so much better. When I eat veggie, I have so much more energy and pep. Meat seems like a sedative anymore. Mmmmm. beans and cilantro! Thank god I can still eat beans (I think - I've added several new foods to the no-no list recently), and I hadn't thought of them lately.

7. Ooo, yes, I've had that before
Kinda rough on the tummy, even with some bean-o. But oh, so tasty. My father taught me how to make bacon and beans in a crock pot, with a 1/2 teaspoon of baking soda and some cumin and onions and garlic. So yummy that I'm glad I can't eat it anymore. It's so good it should be illegal.

8. I have the best recipe for a roast
Serve a lot of cocktails, have one guest of honor, and then have everyone insult and tease the honoree for 90 minutes.

Either that, or marinate in Italian salad dressing, sear the meat on each side, and leave it in the slow cooker for a few hours.

9. Changed eating habits recently.
Family decided to get healthy and we now eat lots of fish, chicken, tofu, and beans. If you can eat fish Tilapia is good. Take a little olive oil, onion, garlic, shallot, and lemon. Bake in parchment or foil for about 10 min. (4 oz), squeeze with lemon when done. My 10 yr old loves this and asks for it @ least once a week.

11. I love fish, but it's hard to get good fish here

Most of the stores have farm-raised, which I usually pass by.

Once a year they have a decent amount of fresh fish, and I will go to town on it then. It's too bad I'm such a lousy fisherman. I'd love to catch some dinner.

3-1/2 hours later, I just had my first taste: superb.

13. Try an Asian market.
Ours actually has live Tilapia for $4.99 lb. We found this market about a month ago and have been several times.

12. i got the best fish recipe the other day
usually I don't use the microwave for anything but veggies and re-heating stuff, but this recipe is a keeper

using 4) 4-6 oz fillets (salmon is our favorite, but you can use any 1 inch + thick fillet) salt and pepper to taste and in a microwave safe pan (I use my corning ware) add 1/4 cup of spicy italian dressing, cover and microwave on high for 7 minutes.

take fillets out and add 2 tbsp of butter to liquid in pan, stir to melt butter and squeeze the juice of half a lemon into it and pour over fillets

fast and YUMMY :9
