*****MEATLOAF*****
Jan Michael's thread inspired me. Yeah, I know he was talking about Bat Out of Hell Meatloaf, but I just made my very first Loaf Out of Oven Meatloaf. It's finishing up in the oven right now, and the potatoes are boiling away on the stove.

What's your meatloaf recipe?

11. I got my recipe from Mark Bittman's How To Cook Everything
Ingredients:

• 1/2 cup plain bread crumbs, preferably fresh
• 1/2 cup milk
• 2 pounds mixed ground meats: beef, veal, lamb, and/or pork
• 1 egg, lightly beaten
• 1/2 cup freshly grated Parmesan cheese
• 1/4 cup minced fresh parsley leaves (I used a little less)
• 1/2 teaspoon minced garlic (I used more like twice this)
• Salt and freshly ground black pepper to taste
• 3 slices bacon optional but good, especially if the meat is very lean


1. Preheat the oven to 350. Soak the bread crumbs in the milk until the milk is absorbed, about 5 minutes.

2. Mix together all ingredients except bacon. Shape the meat into a loaf in a baking pan; top with bacon if you like. Bake 45 to 60 minutes, basting occasionally with rendered pan juices. When done, meat loaf will be lightly browned and firm, and an instant-read thermometer inserted into the center of a meat loaf will read 160 F, cook for 1 hr.



It was really good. This time I just used ground beef. Next time I think I might experiment with a mix of ground meats. I also added a little sage.

Tonight I served the leftovers on hamburger buns with a little gruyere. Yummo. :)

3 lbs ground beef
2 eggs
1 envelope of Onion soup
half a small can of tomato paste
and Progresso Italian bread crumbs (your discretion)

mix all together...
if its a little to dry add a little water
make into a meat loaf and put the rest of the tomato paste on top
when its done I put cheese on top to melt....
just put back in oven for a few minutes

I used 3 lbs because I use to have a lot of people to feed.... :)
baby red potatoes
and a great veggie
and a salad and fresh rye or pumpernickel bread


I get a lot of yums with mine...

If there was ONE song on the planet that I was certain would NEVER be used in a commercial (except possibly by a condom company) it would be "Paradise by the Dashboard Light". Granted, they completely changed the lyrics for the commercial, but geezus....... :wtf:

I just read that thread! I can't believe someone could get so snooty over meatloaf and meatballs. Now wouldn't it be a hoot if she earned that granite cookie for a C&B thread. :rofl:

One thing I have discovered over the years is that so much of cooking is regional and traditional that many times the right way to make something isn't always the same for everyone.

How goes it lady? Hope it's all well in your household. :hi:

Yes it really does taste like a bacon cheeseburger but better and don't be skimping on the bacon.

this is the only thing that makes me miss meat a little bit.

Old family recipe. It's so good it's been immortalized in a novel as a plot device. Top that!

P.S. I like Bat Out of Hell Meatloaf too....:blush:

12. I sorta came upon this one night and the family loves it.
I mix together ground beef, eggs, some seasonings and fresh bread crumbs.

Then I put half the mix into the pan, top it with sliced red peppers, (not raw, the ones in the jar), feta and fresh basil.

Finish it off with the rest of the meat and voila. There you have it.

My family practically licks their plate.

13. It's fairly WT but we all love it, expecially my son.
I don't really measure for this recipe soo...

1 1/2 lbs of meat...more or less
1 onion minced
some green pepper minced
bread crumbs & oatmeal
Ketchup
Worcestershire Sauce
Garlic powder
Parsley
1 egg

I mix it together until the consistency is right.
