I am going to try my hand home canning this weekend

I don't know how good it is because I don't like pepper jellies.

4. Green pepper jelly?
Used to live with a man that loved it on cream cheese and crackers. I'd make up a small batch once or twice a year for him. I froze mine rather than canning it.



Cook off the cleaned (de-seeded) peppers to the point they are just tender crisp.

Puree them

Add sugar to taste and green food color if you want to improve the color (optional!)

Follow directions for Sure Jell.



Worked fine. I see no reason you'd have to freeze that jelly--I assume you cold paraffin seal the top of of the jars like you do any other home-made jelly or jam.
