Tomato wedges. Cucumber spears. Grilled onion. Microwaved potato. Grilled Japanese egplant. Grilled yellow squash. Grilled corn. (Oops, I forgot. That, like the onion, was frm the Farmer's Market in town this morning, not from our garden.)
With basil mayonnaise and parsley butter (actually, olive-oil margarine, not real butter).
(Oh, there was some grilled teriyaki chicken too, but by the time I was finished wading through the vegetables, I didn't have any room left.)
And just in time, too. I've been pretty much off my feed for the better part of a year, and Mrs R was SO happy to see me wolfing down all that dinner. Maybe the fact that it's 65 degrees in the middle of August helped my appetite, too?
I'll grant that not everyone has the time or inclination to have a vegetable garden, but with the proliferation of farmer's markets these last few years, there is NO excuse for anyone not having this kind of "bounty of the season" food in the summer.
Oh, yes. I'm one happy guy. Now, if the dang Red Sox could just get a HIT or two...
