Say cookies and pizza. Start with ten cookies and 3 pizzas. If I take away a pizza, how many cookies do you need to be indifferent (hence the name) about the loss of a pizza? Thus you plot various curves in that manner. The curve is a line like (25,0); (20,1); (16,2); (13,3) - combinations of cookies and pizza that give you the same level of satisfaction. Then given a budget constraint you can find, in theory, the point of maximum satisfaction - the indifference curve which is tangent to your budget line.

But it's cooler that I took a welfare economics class from Professor Coen, father of Joel and Ethan.
