What are y'all doing up so late? Me, I'm grinding my meat.
Seriously, I'm grinding some lovely venison-burger tonight.
I brought a deer back on Saturday, but I couldn't let it
hang outside for the proper 5-day period because Monday was
just unseasonably warm.

So, I cut it up Sunday night, got the roasts wrapped and into
the freezer (except for the one that's brining in a 'corned beef'
mix for Saturday supper), and I've "aged" the small pieces in
the fridge for 3 days.

So now, the time of waiting is past, and the hour of meat-grinding is at hand!

If you haven't ever had a good, properly-ground venison burger,
you don't know what you're missing. I've paid good money
for BUTTER that wasn't as tender as my venison burgers.

So, that's what I'm doing in the wee hours this evening.
What are you guys up to?

Oh and I just finished steaming 4 dozen tamales (beef, but venison would be damn fine too). Ready to crash.

6. Hand.
I've got about 15lbs of lean meat and 3 pounds of fat scraps,
and I'm mixing them as I go.

I try for a rough 85/15 mix, so I reckon I'll have 3 or 4
pounds of meat left over after the fat is gone...that's
when I reckon I'll break out the spices and experiment
with a 'smoked dry sausage" idea I've had on my mind for a few years.

8. No. I went into the forest with my antique 1895-model Winchester rifle...
...and returned home with a skinned & quartered deer carcass
in the trunk of my car.

No currency was involved at any point, I assure you.

23. Well, that would probably be true if I had a wife, but since I don't, I reckon it isn't.
I had a wife once, many years ago...it lasted about 18 months.

And she probably WOULD have appreciated it if you had called me,
because she was only with me for the fat paycheck I was drawing back then,
and I really think she would have been thrilled if I had been able to
spend my "happy naked sweaty fun time" somewhere else.

If I was the kind of guy who could wear a ring and keep a girlfriend on the side,
we could have stretched that marriage out to 5 or 10 years.

But I'm not, so we didn't. And that was a long, long time ago.



Life is STRANGE, and I make it a point to rise to the occasion.
I am many things to many people, but I'm not MARRIED to anyone.

25. I have enjoyed your posts as well, ever since the first day you signed on to DU.
You work hard to create the impression that you someone you are NOT.
Personally, I find that FASCINATING.

You spend a lot of time and effort constructing DU posts
that seem like deliberate attempts to crete the impression that
you are some sort of flirtacious, superficailly-minded person...

But you're not doing that totally well, and you're not fooling me.
Every once in a while, you get caught sideways and post what you REALLY think...
I've noticed those posts. I've noticed them a lot.

You aren't the superficial little 'flirt' you want DUers to think you are;
you've got an above-average IQ and you are in the habit of THINKING ABOUT THINGS.

You are smart as hell, and you think about things A LOT.
You seem to be attempting to hide your light under a bushel;

FYI: it's not working; those of us with eyes have noticed
that your bushel has a thousand-watt bulb under it and it's
glowing bright enough to attract small aircraft!

Seriously: call me sometime.

You and I together, even just for an afternoon....
we could sweep a seriously broad SWATH across the face of this planet.

14. Oh, they're grinding alright...but it ain't meat.
The scientists currently spending their lab time
researching the concept of "zero-point energy"
would be well advised to take a look at GD:P sometime.

That entire forum regularly derives immense amounts of HEAT
from the empty spaces between bits of NOTHINGNESS. :eyes:

28. Tell me about it. It looked like it was the size of a Border Collie when I opened fire on it...
...but now that I've got it in the kitchen, I've
got bowls full of venison stacked up to the fricking rafters!

150lbs is a very small amount of weight to drag out of the woods,
but it's a total OVERLOAD of meat for ten bowls
and one meat-grnder on an 8-foot kitchen countertop, Itellyawhut!
