Just made some the other day. Takes more water than most soups, but the flavor and texture is wonderful! And you can be as minimal or veggie-inclusive as you want :)

Just be sure you get black pepper and cumin in there.

3. Pea soup
No, not that anemic purée from the hospital--a chunky stew with big chunks of tatties and carrots, maybe some dill, and cheese. Must have a crusty, whole-grain, homemade bread (or PB sandwich) for dunking and an enormous salad on the side. Equally good is my potato soup, which is kind of the same, but without the peas.

We're down to 35 here tonight (in FL!), so this is actually good inspiration to fire up the crock pot for today. :)

Liquid pie? I'm all about ginger, so color me intrigued.

Another good squash-y soup is simply pumpkin, portobellos, and (soy)milk, seasoned to taste. The fast food version is simply a can of good pumpkin and a box of upscale soup. One of those things you might not want to think about too much, but really delicious.

12. Try it with Sage....mmmm.
Brown some butter and add chopped sage leaves or ground sage, add baked squash, broth and puree. It's a nice variation.

22. That reminds me of my pumpkin, peanut butter, and coconut milk soup.
It's a little difficult to find fresh pumpkins this time of year, but I could use butternut squash.

I use the A Taste of Thai coconut ginger soup mix base and just add veggie broth, coconut milk, straw mushrooms, cilantro, bell pepper and seasoned baked tofu.

Your tomato and grilled cheese is one of our go to meals.

...Rachael Ray would call this a "stoup" (somewhere between "soup" and "stew" in terms of solidity) but dear God, the word "stoup" annoys me so much that I can't even believe I typed it.

Here is my sort-of-secret, time-tested, always delicious recipe:

Pasta e Fagioli (Italian Pasta and Bean Soup)

1/2 cup fine quality olive oil
1 cup diced onion
1/3 cup diced prosciutto or pancetta
2 cloves garlic, peeled
2-15oz cans Cannellini beans with their liquid
4 cups Chicken Broth
Salt and pepper to taste
2 cups canned imported Italian plum tomatoes, well drained and chopped
1 pound Ditali pasta cooked
1/4 cup freshly grated Pecorino Romano cheese, optional

1. Combine oil, onion, prosciutto, and garlic in a large saucepan over medium heat. Saute for about 5 minutes or until onions are translucent and begin to turn golden. Do not burn garlic.

2. Stir in beans and their liquid. Add broth and salt and pepper and bring to a boil. Add tomatoes and return to a boil. Lower heat and simmer, uncovered, for 10 minutes.

3. Stir in pasta and cook for an additional 5 minutes. Serve hot, sprinkled with Pecorino Romano cheese, if desired.

40. Tuscan bean soup with fresh rosemary (from Williams Sonoma)
It has onion, garlic, carrots, celery, navy beans, chicken broth and fresh rosemary. You puree one third of it and usually have to add in a little extra chicken broth.

To die for...

51. Scotch Broth or Pepper Pot
Campbell's has put both back on the shelves, at least in Minnesota, after a long absence. There's no spot for them in the nice racks in the stores, so they're usually on a bottom shelf nearby. Both are excellent lunch soups and very satisfying. However, dilute them with only half a can of water for best results.

64. Kale is absolutely wonderful in soup. I make a white bean, kale and turkey meatball
soup (with tons of garlic) that is one of my favorite foods in the world. My husband can't have potatoes (he's diabetic), but your soup sounds wonderful too.

63. I make these on a regular basis: White Bean/Kale/Turkey Meatball, Black Bean/Tofu/Chipotle Chili,
Mushroom/Barley, Roasted Vegetable, Chicken/Vegetable, and Lentil. I'm a soup fanatic. I usually make my own stock.

When I go out for soup, it's usually Pho or Tom Ka Kai.

My favorite soup?

Tortilla!

Chicken stock (I use Better Than Bouillon)

Chunks of cooked chicken breast

some diced tomatoes or canned diced

half a bottle of green tomatillo salsa

some frozen corn

some fine-diced onion

ground cumin

a big fat handful of cornmeal or masa stirred in

Simmer all for half an hour or so, then....

tear up half a dozen corn tortillas into chunks and add them to the simmering soup; they will turn into little dumpling-y pillows

Serve with some sliced avocado, crispy tortilla strips or crumbled blue corn tortilla chips, a dollop of sour cream, and a wedge of lime.

Mmmmmmmm.
