Beef jerky fans check in
I love my jerky and had a hankering for some today. I went to the super market to find some Pemican but they didn't have any so I bought some weird Jack Links strips. They were okay (I finished the bag) but not what I was craving.

My favorite jerky is the kind you find loose in jars at general stores in rural areas. I have no idea where to find that now.

1. Tillamook smoker
all the way. Their brown sugar jerky is killer.

Jerky is the ultimate traveling food. Except for the salt/dehydration issue. Its pretty awesome for the rest of life too.

40. I would imagine it has mostly West coast availibility.
http://www.tcsjerky.com/proddetail.php?prod=423

pretty much all their stuff is good, though I can't personally vouch for the chili peper and lime jerkey, but that brown sugar honey is kick ass.

This is the first time Ive ever been to their website. I find it disturbing that they feel something as awesome as beef jerkey needs "testamonials".

6. Usually, the only Jack Links I see are the big nuggets
I've never tried them but today I bought their thick strips. Very tasty but not the jerky I was looking for.

I've never seen/noticed the Hot & Sweet.

11. I tried Inuit jerky once.

The Inuit was delicious.Beaver jerky is even better. :P

But seriously I'm sure that someone living close to an

Inuit village could easily buy some, or hunters can make

their own elk jerky but were I live (Quebec) I never

saw the stuff in grocery stores.

Jerky is great, but some of the stuff is far too hard to the point where I start having pain in my temples from chewing too much.

9. pretty easy to make if your oven goes low (200 or less)
I don't like the smoke flavor virtually all store bought has. Just lean beef (or whatever - venison, turkey) salt and lots of black pepper.

19. My neighbor makes his own.
Beef and venison. Uses one of those food dehydrators and makes up his own marinade mix. brings me some all the time-mainly because he uses my spare trays from my dehydrator.

20. Alton Brown shows the right way to make it yourself
It's the same way my dad used to make it many years ago. After marinating and drying off the meat you put lay it across square air conditioner filters (preferably new) and bungee cord it to a box fan. You turn the fan on medium and let it do it's magic for 12 hours.

This method uses no heat which takes longer, but it does a much better job. It drives my dogs crazy though.

34. The marinade
However, this is really no different than if you had used a heat type dehydrator. You must either marinade or brine your meat in order to fully preserve it. You can either use an acidic solution (bad bacteria can't live in a low PH environment), or you can use a salty solution (brine).

Here is Alton's recipe:
http://www.foodnetwork.com/recipes/alton-brown/jerky-recipe/index.html

I have my own that I use, which is mostly teriyaki, but you get the idea.

27. I used to live a few miles....
...from the Jack Link's beef-jerky plant in Alpina, South Dakota. One of the grocery stores in town got the odds and ends, wrapped'em in cellophane on a styrofoam plate, and sold it in bulk. I think it was $10 for a two-pound package, and it normally costs about $20 a pound if you by it in the fany bags in the store.

Yum!

Jerky is a convenience store item. Convenience stores where they sell diesel usually have the widest selection.
