5. Yea to the spring rolls and the rice noodles, but...
nuoc mam ruins anything it touches. That is the worst sauce or condiment I've ever tried. And how they make it is gross too. Give me the spring rolls but also give me the hoisin sauce with chopped peanuts and shredded carrots in it - yum!

9. Not just dead fish...fermented (read rotten) fish.
Yum. There are many varieties of fermented fish sauce...all very nice.

Worchestershire sauce is one of them, unbeknownst to most folks. Look at the ingredients of a proper bottle of it. Teehee...the influence of India.
