4. Steamed is best.
I make a fresh garlic and butter sauce to drizzle over it (lightly).

It makes a good addition to any stir fry. If you like lasagna, try layering it between the noodles. Fresh spinach goes well with it that way.

I also just eat it raw. You can shred it like carrots for salads or sub sandwiches.

3. I usually lightly saute it in olive oil
with some garlic and salt.

I also add it and zucchini to stir-fried veggies over rice and a splash of soy sauce when served.

5. Slice up and sautee' with some onions and a bit of olive oil
at least until the onions carmelize a little. Salt and pepper.

11. That's exactly the way I prepare squash. Simple. Classic. Yummm.
I cover mine as they cook over a medium (to med-lo) heat.

7. I finely dice yellow squash, add diced onion and a strip of bacon
then boil it for about 30 minute or until it is tender. Finally, I add salt and pepper to taste.

8. Zucchini Torte
My mom makes this for every summer holiday, and I wolf it down every year.

Ingredients:
4 cups zucchini, sliced
1/2 cup grated cheese
1/2 cup oil
1 small onion, chopped
1 clove garlic, chopped
4 tablespoons fresh parsley
1/2 teaspoon salt
1 dash pepper
5 eggs
1 1/2 cup Bisquick


Directions:

Mix all together and marinate 1 hour. Add 5 well beaten eggs and 1/4 tsp salt to mixture. Add 1-1/2 cups Bisquick and 1/4 tsp salt and mix well.

Pour into greased 8x12 pan. Bake 350° F. for 45 minutes.

9. Here's a recipe from Ina Garten ... "Maple-Roasted Butternut Squash"
(I'd imagine it would work with other types of squash?) Personally I'd skip the pancetta because I don't eat red meat, but here's the recipe:

Ingredients:
Serves 6

* 1 large butternut squash
* 1 head garlic separated but not peeled
* 2 Tbsp. good olive oil
* 2 1/2 Tbsp. pure maple syrup
* 1 tsp. kosher salt
* 1/2 tsp. freshly ground black pepper
* 2 ounces thinly sliced pancetta chopped
* 16 whole fresh sage leaves
* French bread for serving

Preheat oven to 400°. Peel and seed butternut squash and then cut into 3/4- to 1-inch cubes. Place squash and whole unpeeled garlic cloves in a baking dish or sheet pan large enough to hold them all in one layer. Toss with olive oil, maple syrup, salt, and pepper, and bake for 20 to 30 minutes, until squash begins to brown, turning once during baking.

Sprinkle pancetta and sage leaves evenly over squash and continue to bake for another 20 to 30 minutes, until squash and garlic are tender and caramelized. Season to taste and serve hot with French bread for guests to spread with the roasted garlic.

10. its good grilled - rub a little olive oil first
but here is my favorite:

Stuffed Squash

1 overgrown zucchini or several large squash, any variety
1 lb hamburger
1 onion, chopped
2 cloves garlic, crushed/chopped
1 can diced tomatoes
1 cup rice
1 cup water or broth
1 cup grated cheese
salt and pepper to taste


cut squash in halves, hollow out and discard seeds
brown hamburger, onion, and garlic.
add broth, tomatoes and rice
simmer covered 15 to 20 minutes till most liquid is absorbed and rice is done
stir in cheese
stuff squash halves and place in shallow baking dish
bake at 350 for 30 minutes
remove stuffing and throw away squash
serve and enjoy

12. Cut small squash in half leaving skin on. Bake for 45 minutes. Pour
maple syrup into the bowl of the squash. Eat.

17. same only brown sugar and butter instead of maple syrup
maybe add a little maple syrup cause what the hell.

then you just bake it at 350? until it is all mushy

sweet emough to make your fillings hurt

14. Sorry I'm late, and this is quite unhealthy, but here's my favorite squash recipe.
My granny and mom made this every summer at least a time or two. :hi:

19. This is really easy and yummy!
I take ground turkey and crush up about one whole pack of club crackers in it w/ one egg and a small can of tomato paste. I flavor it w/ garlic salt, salt, pepper. Then I take a descent sized acorn squash and cut it in half. I use a spoon and spoon out a hole in the middle just enough to stuff the meat inside with (because the squash is really yummy so dont waste it all ;-) )After I get both halves stuffed with the meat I put it in the crock pot with some stewed tomatoes and about 3 cups of water and I let it cook about 4 hours. It is DE-LISH, CHEAP, and EASY!! Try it! That meat can usually stuff about 4 halves of acorn squash. FYI!

20. I concocted a yummy mixture the other day...
Heres what I did :)

Cubed up 1 zucchini and 1 big yellow squarsh

Diced up one big local red onion

Poured some zesty Italian dressing on them and let it all sit a while.

While it was sitting I mutilated about 9 cloves of garlic and made some shell macaroni.

I got a pan hot and added 1/4 a stick of butter then tossed in the squash mix.

Fried it until it was yummy out of the pan. Removed the stuff and left pan hot.

Put 1/4 stuck of butter in pan til near smoke.

This part has to be fast :P

I put the mutilated garlic in pan and stirred to coat.. then added about 1/4 cup of All-Purpose flour and stirred in until garlic got right. (don't let that go to long unless you like the taste of burnt garlic)

Added a pint (whatever size small milk cartons are) of heavy cream and stirred in scraping the goodness from bottom of pan. I also added some water.. but I think it shoulda been milk.

I got the whisk and stirred until it thickened to a sauce and stuck to my wisk.

I added the sauce to the shells then added the squash stuff.

It was delicious yummy garlicy goodness mostly from my garden!! I was proud.

24. These are good if you want to sneak some squash down a picky eater:
Squash Patties

1 summer squash, grated
1 egg
approx 1/2 to 1 cup SR flour, depending on size of squash

Mix all together.
Drop by spoonful into hot oil.
Fry until golden.

25. My favorite squash casserole, without which no Thanksgiving is complete
or so saith my daughter:




3 pounds of yellow squash or zucchini, cubed
1 small onion, grated
some minced garlic
salt

bring to boil and simmer 10 minutes.
Drain and mash with 1/2 stick of butter

add:

1 egg beaten in 1/2 cup of milk
2 cups of shredded cheese
1/2 stack of Saltines, crushed

Bake at 425 until bubbly, in a nice deep casserole dish.

sometimes I put dill in it.
