White Trash Dinner of Chicken & Rice with Onions -

What's your favorite white trash recipe...

I also love all the other classic rice recipes - red beans & rice, dirty rice....

(I love the White Trash cookbook's Kitchen Sink Tomato Sandwich & Rainbow Icebox Cake)....

5. Tuna casserole (with Velveeta & macaroni, of course)
HEARTY TUNA CASSEROLE

1 can cream of celery soup
1/3 c. milk
1/4 lb. Velveeta cheese
1 pkg. (7 to 8 oz.) macaroni, cooked & drained
10 oz. peas
2 cans tuna, drained & flaked
1/4 c. chopped onion
1/2 tsp. salt (optional)
Dash of pepper

Combine soup, milk and cheese and heat until melted. Stir in macaroni, peas, tuna, onion, salt and pepper. Pour into greased casserole dish. Bake at 350 degrees for 30 minutes. You can top with additional pieces of Velveeta cheese and return to oven until cheese melts

16. the phrase "white trash" IS racist against people of color.
On the surface, yes it's used to insult white people.

But the implication of needing the qualifier "white" is that the default color of people who are trash isn't white. It's a way of telling folks they're living in a way that's beneath how white people are supposed to live. That's why we don't have a need in our language for phrases like "black trash" or "latino trash." The phrase white trash already incorporates the racist concept that people of color aren't expected to live outside of trailer parks and eat fancy foods and act all cultured.

9. Wilted Dandelion Salad . . . (Note: the dressing in this recipe is suitable for any
wilted salad . . . such as wilted endive (escarole), spinach, lettuce or mixed greens.


WILTED DANDELION SALAD

Dandelion greens
4 thick slices bacon, cut in sm. pieces
1 egg, beaten
1 tsp. each salt, black pepper and paprika
3 tbsp. sugar
1/4 c. cider vinegar
1/4 c. water

Note: NEVER use dandelions after they begin to flower -- they're too bitter and tough for a ssalad.

Wash and tear dandelion leaves as you would other greens for a salad. Roll in clean cloth to dry.
Put greens in salad bowl and set aside. Fry bacon and add to greens, leaving the drippings in the skillet.

While bacon is frying, beat the egg together with the salt, pepper & paprika, the sugar, vinegar and water.
Mix well. Add vinegar mixture to hot bacon drippings; cook over low heat, stirring constantly until dressing
thickens. Pour hot dressing over greens; toss gently and serve at once.

my grandmother and great aunts would collect young dandelion out of the public parks when I was little....yum, yum.

We don't need to know the origin(s) of Wilted Dandelions to thank
God for making the ingredients available in the Spring.

BTW: In our old neighborhood, youngsters were sent, with a pillowcase,
to pick dandelions and other greens across the tracks and along
the riverbank where everyone competed with the older
babushkas for the earliest, tenderest shoots.

(Ah-h! And remember the scent and the taste of sassafras tea?)

Edited to add:
When I was a child, all poor folk---despite ethnicity---who lived
in the coalfields were considered "white trash" by "outsiders". But . . .
IMO, only "poor folk" were given the God-given good sense and taste to
pick those green riches freely growing on the riverbank---or in the
public park---and know how to serve 'em up. ;)
