What am I going to do with *16* acorn squash?
So this spring I was a moron and planted a single squash plant, thinking it would be just another nice little plant in the corner of the garden and maybe would put out a few squash in the fall. Silly me. The thing turned into Audrey. It was enormous. The leaves were a foot across and it sent out its tendrils about 12 feet in all directions. It completely engulfed the garden.

So finally the leaves started getting gray and droopy and I figured it was time to take it out. In the process I found sixteen squash, hidden away in the foliage like Easter eggs.

I like squash, but what am I gonna do with sixteen of them?

You might also look for ways of canning or preserving them. Like this one on candied acorn squash :)

4. cook 'em
and then freeze in those Glad thingees. The only way I know to cook them is to cut them in half, take out seeds, put a pat of butter and a "tad" of brown sugar and bake.

Wow. Don't you feel great that they did so well???? Good on ya!

Use some LED circuits for the interior lighting, like used for these canning-jar lamps :)

14. Yeah, a soup-kitchen would
as the Food Banks usually want non-perishables.

One food co-op I know of here takes all the perishables at the end of the day to a soup kitchen. I'm sure they'll love the donation if you do the same :)

Puree some cooked squash, carrots and fennel and mix with chicken broth. Heat and add black pepper. Awesome.

Or - cut them in half, cover them in plastic wrap and microwave them until done. Then mix with brown sugar, butter, and maple syrup.

You're on your own for the other 14.

... will keep for months. Put them in a cool dry place. You can eat them in soups, in any recipe that calls for pumpkin, or just mashed.

30. Squash soup freezes nicely.
Puree roasted squash with chicken broth, butter and sage. A few containers in the freezer will always come in handy.
