Does anyone know anything about agave syrup?
I picked some up at the health-food store on the basis of its label's claims of being a healthy sweetener with a low glycemic index. But when I looked it up on line, I found that it's mostly fructose. Isn't the problem with high-fructose corn syrup that it's mostly fructose? Now I'm not sure if agave syrup is something healthy or will kill you.

3. The most common use I've seen for it is in vegan baking...
used as a honey substitute. I prefer the dark to the golden as I think the dark has more flavor.

9. Bee abuse
Mind you, no bees have to die in this process but that was an arguement I never ever want to visit again.

11. spinbaby, it was an arguement you could not win
I couldn't win it.

But we're taking from the Bees in some form of abuse manner and therefore it is not vegan.

5. I used it to do that fast that people normally do with grade B maple syrup

It seemed to work good for that. It has a *much* lower glycemic index than most other sugars (which is probably why it worked well for the fast) and, at least in that lemonade mixture, tasted good.

I would think that it would be a (comparatively) good sweetener for diabetics.

6. I use it all the time
basically have replace sugar in most of my cooking, although I haven't completely figured out how it acts with baking.
HFCS has less fructose and more glucose. Your body needs time to break down the fructose.

7. I've noticed it's a different kind of sweet
Not so sweet to start, but it lingers. Nice to hear it's not horrible for me like HFCS.

The stuff is fairly expensive, so I'll guess I'll see how I like this bottle before I buy more.

12. I buy it in a gallon jug
Check organic/health food stores in your area and you might be able to get it in a larger size and save some money.
