Norfolk Island Pines
I have a few small plants, they're about 18" tall.

Can they be pinched back to encourage side growth or are they like true trees and you shouldn't mess with the leader, new top growth?

3. Ors was a 3 foot tall house plant
Then we moved it into the back yard. It's now 25 feet high. House plant my tortillas!

4. They sure grow
We've got one that is 10 feet tall. Except the lower brances fall off as new ones sprout, so it is like 7 feet of skinny trunk, 3 feet of actual tree.
