Smells great the longer it stews in the slow cooker.
I bought a 7 pound boneless Pork butt, and threw it it the crock pot last night at about 9pm.
Let it cook all night, with some cumin and onions and green chili's.
When I woke up this morning, it was all I could smell.
Pulled it out around 10am and it fell apart, shredded, no need for a knife, a wooden spoon worked fine.
Back in the crock pot, chopped up 9 tomatillos, 10 jalapeno peppers, 3 poblano peppers, 4 serrano's, three chopped onions, and three cans of diced green chili's.
In the blender and pulse, pulse, pulse.
In the crock pot.
Bunch of cumin, smoked and regular.
Three cloves garlic, roasted and chopped.
Sea salt, ground pepper, smoked paprika, ground pepper, little bit of oregano, little bit of Old Bay, little bit of tequila, little bit of beer.
Everyone in the pool.
Six hours later, taste.
Not good enough.
Add a little this, and a little that, and NOW.
Oh, man.
I'll give it another hour in the crock pot.
Dinner is around 7pm.
Couple of warm tortillas, some refried beans, little bit of rice, some shredded cheddar cheese, BIG scoop of the pork, and roll it up.
Ice cold Abita Turbo Dog in a frosted glass, maybe a side of Chinaco Anejo in a chilled shot glass.
We should chill the fuck out.
Life is good.
