green chili turkey enchiladas and/or chimichangas
dinner tomorrow night. roasting a turkey I think I got on sale two years ago (trying to get my freezer cleaned out, nevermind the budget is all shot to hell)

made a half gallon of green salsa with a bunch of tomatillos and green chilis from the garden plus jalepenos, onions, a ton of garlic and cilantro, salt cumin and lime juice - it came our REALLY good, if I say so myself

tomorrow I will shred up the meat and make some broth to mix with the salsa for the enchilada sauce (or filling if the husband feels like frying chimis, I hate doing it)

4. you know I don't think he's ever had the misfortune to eat any of my cooking
which is really odd, considering how long we've known each other

Sounds like you might have enough for a pot of chili verde, too, depending on the size of that turkey. There must have been a bad crop of chili peppers, because I have been looking for some Anaheims/NuMex chilis, and they are not to be found, except for those little cans of the chopped ones. Been having a hankering for chili verde, and I have all the ingredients, except for the peppers.
