2. A really simple dish to make with Portabella's
is to saute onions and garlic together with the mushrooms. After they saute for a while, add some red wine and reduce it. I like to add a little worcestshire for flavor too. When the wine is reduced add some parmesian cheese and serve it over pasta. I make this a lot when I am pressed for time to get dinner ready.

3. We love it whole.
If you have a George Forman Grill (or similar), just brush both sides with olive oil, sprinkle some finely minced garlic on it, some parley, and grill. It's delicious that way. :hi:

You can buy the dough from the bakery at most grocery stores. No recipe needed really, just add what you like. Mushrooms, green peppers, egg plant and cheese sounds good. You dont necessarily have to have a red sauce either. Cream sauces work good for veggies. Im hungry!

5. "Chicken" fried portabella mushrooms
4 large portabella mushrooms

1 cup flour
1 cup bread crumbs
1 tsp. dried thyme
salt and pepper
2 beaten eggs, or egg substitute
1/4 cup milk, skim is fine
butter

Wipe mushrooms with a damp paper towel to clear debris. Combine flour, bread crumbs, thyme, salt and pepper. Beat eggs with milk. Coat mushrooms with egg mixture, then coat in flour mixture. Melt butter in large frying pan and fry mushrooms until golden brown.

Cream Gravy

2 T. butter
2 T. flour
2 c. fat free half and half (or cream)
salt and pepper to taste

Melt butter and stir in flour to make a roux. Do not brown! Slowly add half and half, or cream and stir continuously until thick. Add salt and pepper to taste.

Make some mashed potatoes. Delicious!

6. Vegetarian or VEGAN?
YOu can grill a portobello mushroom and make a burger out of it using the shroom as the burger..yummy..filling and if you aren't vegan, melt a bit of bleu cheese on it...roast a piece of red bell pepper and use some dijon mustard for dressing.

7. I love to roast them about 20 minutes in the oven
with sesame oil and soy sauce. Then slice, and roll up inside of lightly steamed collard greens, maybe with some tempeh slices inside as well.

It helps if you have a sushi mat to do the rolling.

Serve like sushi, with soy sauce and wasabi to dip in. :9

8. marinate in balsamic vinegar and olive oil after slicing

add sliced red pepper and purple onion and garlic and "italian spices" to the marinade.

After it's marinated you can do lots of stuff with it:

broil it and serve on pasta or toasted french bread

saute and eat plain for a low carb dish

saute and serve over rice or couscous

sprinkle on pizza

9. I've made them along with
cherry tomatoes. Mix them in olive oil with salt, pepper, and a little oregano along with chopped garlic. Roast uncovered for about 40 minutes at 350. Really good.
