AWWWW!! Obama just brought in cupcakes and sang Happy Birthday to Helen in the briefing room!

One cupcake had a candle on it and she blew it out. Obama gave her a kiss and they chatted a little bit.

I just got back from the store buying MY celebratory cupcakes ..... there were no Obama-themed ones left, must have sold out this morning. :)

that's the kind of guy he is! I eat "celebratory" cupcakes as often as possible. In honor of Obama, of course. :D

..... to almost no processed carbs during the week ...... and since I coudln't exactly have "celebratory brown rice" I splurged! ha ha

(although, he would have probably prefered I had the brown rice)

but Obama said he likes cupcakes! I do it for HIM! :D

Not much different from other animal fats like butter, from what I hear. As a pastry cook in a southern-style restaurant, I learned to appreciate it qualities. Pure and in moderation, it's fine, like butter, another animal fat.


Hydrogenated, not so much. Ewww.

out of almond flour and using stevia for sweetener. I'd even melt some Godiva chocolate to put over the top! (Dark chocolate is GOOD for you!) :)

What are the chances you'll share that recipe? I usually only bake 1-2 times a year but I'd make an exception for this.

I found the recipe for them, as we hand it out here at the clinic for our weight loss patients. You can make it with almond flour if you don't like walnuts.

One Bowl Brownies



Ingredients

4 squares unsweetened baking chocolate
1 stick butter
12 drops liquid stevia, or to taste
½ tsp. vanilla
½ tsp salt
1 Tbsp cinnamon
3 eggs
1 cup finely ground walnuts


Directions

Preheat oven to 350 degrees.
1. Microwave chocolate and butter in large microwavable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted.
2. Stir in sweetener, salt, and cinnamon; mix well. Add walnuts and stir until well blended.
3. Spread into greased foil-lined baking pan.
4. Bake for 30-35 minutes or until toothpick inserted in center comes out with fudgy crumbs.
5. Cool in pan before cutting into squares

I'm having company for dinner next weekend and would love to have something homemade for dessert. I can't wait to try this.

Which flavor? Strawberry daiquiri or Fuzzy Navel? :shrug:
