Great news! Brisket is health food!
When a group of international BASF employees stopped into Fat Mac's for a plate of down home Texas barbecue this week, little did they know health food would be on the menu.

It's true.

Last week, Texas A&M released a study that showed that brisket - a Texas favorite - is rich in monounsaturated fat - the "good fat" found in olive and canola oil.

What's good about good fat is that it helps to lower bad (LDL) cholesterol and raise the good (HDL), said Susan Becker, Christus St. Elizabeth Hospital registered dietician.

The knowledge that it might be good for them did not cast a pall over the dining experience for these culinary adventurers, who dug in with gusto.

1. Hmm.
And monos come from beef how? I don't trust a lot of A&M studies (and not because I'm a big Horns fan). There's lots of business backing at A&M (think Lowry Mays and Clear Channel). But I'm open. I'd like to read the study.

I want to know why brisket is good for you but steak is not.

5. Funny, since the best brisket has a lot of fat on top
That's the point of brisket, let all of that fat melt into the ordinarily tough meat, tenderizing it. Odd that the melting fat is as good for you as olive oil.
