Simple tofu recipes?
Anyone have one? I'm going grocery shopping today and will be getting tofu but i won't know what to do with it. HELP!

1. Here is a favorite of mine
Drain tofu and cut in 1/2 inch or so cubes. Marinate in teriyaki sauce for at least an hour. You can add ginger and/or garlic if you like.

Drain and place in glass baking dish, coat the cubes lightly with sesame oil and arrange in a single layer Bake in a hot 450 degree oven until the edges get a bit crispy.

Really good with rice and veggies or as is.

Hint: Tofu will take the marinade better if you wrap the block in paper towels and place a heavy skillet on top for awhile. This presses out some the liquid so it can soak in the marinade.

2. Can you give me an idea of about how long that takes?
For the edges to get crispy???

Sorry if that's a dumb question, but I have never made tofu! I've only eaten it at Chinese places.

3. I guessing about 20 minutes.
"Crispy" may be an exaggeration. Just think browner. You don't want to cook the tofu until it is rubber.

4. Microwaved tofu
My usual (lazy) recipe is to slice it into about 8 pieces, put it on a plate, add some soy sauce and maybe olive oil, then microwave on high for about 2 minutes.

Somtimes I pull it out after a minute and drain off excess water from the plate.

Simple? Yes!
Delicious? well, you can always add salsa.

My wife recommends throwing slices on a non-stick cookie sheet and baking until its brown on top. You can season it first if you want.

5. Quick scramble
Break it into chunks or bits and stir around in a frying pan with seasonings of your choice. (Soy sauce, seasoned salt, etc.)

Pretty easy, esp. in a nonstick pan.

(Add chopped onions or other vegetables if you like. It's easy if you keep some on hand in the freezer, like I used to.)

7. Tofu "fish"
Press and drain firm tofu. Cut into 1/2"-3/4" cubes and roll in a mixture of half cornmeal and half grated Parmasean cheese (can be soy cheese substitute). Quckly fry in oil until crisp on the outside.

Serve with tartar sauce, cocktail sauce, or any dipping sauce you'd use for fish.

People are usually amazed to find out they're eating TOFU.

A tofu anecdote:

A man is shopping at the grocery store & sees a woman place a block of tofu in her cart. He approaches her & asks what she does with the tofu. Thoughtfully she says, "Every few days I take it out of the fridge & replace the water. In about 2 weeks I throw it away." He nods his head slowly. "That's what my wife does. I hoped you had a different recipe."

Sloppy Joe's
..1 lb firm tofu, squeezed dry, and crumbled
..1 large onion, chopped
..1 large red or green pepper, chopped
..3 16 ounce cans chopped tomatoes or tomato sauce

..2 tablespoon nutritional yeast (optional)
..2 tablespoon soy sauce or tamari sauce
..2 tablespoon Dijon mustard (yellow mustard is good too)
..2 tablespoon lemon juice
..1 tablespoon molasses
..1 tablespoon apple cider vinegar
..Your favorite hot sauce to taste
..black pepper to taste

Saute the onion & green pepper in oil till tender. Add the tofu. If you want to take the time to brown it, you can, or you can simply add the rest of the ingredients & simmer for about 15 minutes. This freezes very well.

Serve over buns, toast or rice. I really like it over toast spread with Tofutti Better Than Cream Cheese.

9. Tofu Cutlets with gravy
This recipie uses extra firm tofu - drained
Preaheat oven to °375

Cut the tofu into 1/4 to 1/2 inch slices along the long side.
Press the tofu out really well
dredge slices in slightly thinned veganaise or soymilk - I like to add liquid smoke to the dredging fluid or you could use soy sauce
Shake tofu in shake n' bake or other vegan bake mix with added poultry seasoning mix, dried parsley and pepper

Arrange on greased cookie sheet and spray tops of cutlets with oil.
Bake till golden
Serve with veggies, taters and gravy


Gravy:
saute 1/4 to 1/3 onion in two tablespoons margarine or oil until onions are translucent
stir in two tablespoons unbleached flour till blended
add 1 1/4 cups soy milk all at once
stir till just boiling then reduce heat and simmer about 3 minutes
add pepper and season to taste


Of course you can skip the gravy if you like, either way it's really simple and makes for really great comfort food

10. Fried tofu cubes
This is probably not the healthiest way to eat tofu - or anything else - but it is delicious!

Press the liquid from a block of extra firm tofu then cut into half-inch cubes. Pan fry in your choice of oils (I usually use an olive/canola blend with a dash of toasted sesame oil added), stirring with a spatula frequently throughout, then just as the cubes begin to brown a little, sprinkle with tamari or soy sauce - watch for spattering hot oil while doing this! I don't know why, but adding the soy sauce while frying produces a very different effect than doing so either before or after. Fry a minute or so longer, then remove the tofu cubes to paper towels. Sometimes I sprinkle the draining cubes with garlic powder and/or dried basil leaves. You can toss these in a salad or pasta or whatever you like, or just snack on them as they are. When my daughter was little I used to have to chase her out of the kitchen reeatedly when I made these to keep her from swiping them all one by one before I could use them.
