I was thinking TVP, but then the recipe said to "dice"!?!?

What are Soy Nuggets? We have coined the term "soy nuggets" to refer to a family of usually salty, fermented-and-aged whole soybean seasonings or condiments that have been made and used throughout East Asia under a variety of names since ancient times. Ironically, this oldest of all fermented soyfoods is, today, the least widely known worldwide.

They're kind of nasty in my opinion, like balls of rancid pickled tempeh.

that does look - and sound - nasty.

more research:

evidently they're marketed as "soy nuggets" - but look for all the world like "chicken" nuggets. There's a company in NC that makes some that Whole Foods sells in it's southern stores. This is the "magic ingredient" in Whole Food's vegan "mock chicken salad". I kept begging the store up here to get the recipe, but since the product isn't distributed up north (WHY NOT??) evidently they can't make it.

I'm going to try to use some other "chicken nugget" products - the ones I can find without the breading. Maybe Quorns (not vegan), or I'll check some of the other stores to see if they have something similar.

I'd just never heard the term and at first couldn't find anything (cause I was trying to google "diced soy nuggets" at first. duh. )
