Weekday Vegetarian on Treehugger.com

I don't know how many of y'all read this environmental newsblog, but they started this topic sometime this year called "Weekday Vegetarian". I know it's primarily aimed at omnis wanting to eat healthier, but I have seen some pretty tasty-looking recipes; just haven't tried any of them yet myself ;)

Just thought y'all would like the link and recipes, but if you've tried any, let us know :)

I like them, too

Only one thing I don't like about them that's consistent, is that they don't seem to make links like that easy to find. Really, I kind of stumbled on it, trying to find such a section at all. I should write them a letter :)
