Vegan cakes?
Anyone here tried baking all-vegan cakes? I am trying my first tofu cake recipe tonight and I'm anxious to see how it turns out! The recipe is Blueberry-Lemon Cake from 'Tofu Cookery,' published by The Farm (Summerville, TN).

I have had some amazingly good birthday cakes made with tofu, so I know it can be done, but it seems a very different skill than traditional cakes, which use eggs as the binder.

1. I generally use Duncan Hines
EnerG Egg Replacer and soy milk... no tofu and they turn out great.

3. Did you tell them it was vegan?
I don't know why, but I get a huge kick out of making vegan dishes for people, then telling them it's vegan after they've eaten it and loved it. :shrug:

5. Vegan Chocolate cake is
one of Dennis Kucinich's favorite things. But sorry, I have no idea how to make it. Just thought I would share.

6. I still haven't tried making a vegan cake
I'm worried about it tasting terrible and me crying in frustration at finding no substitute for the real thing.

Something about using tofu for sweet dishes really doesn't appeal to me. Are there other ways to go about doing it?

9. An online friend, who is a cook, came up with this winning combo,

& it rocks! He calls it Vegan Chocolate Wowie Cake. Wowie! It is delish & easy to make!

Vegan Choco Wowie Cake

2 cups sugar
3 cups white flour
1/2 cup unsweetened cocoa powder
1 tsp salt
2 tsp baking soda

2 tsp apple cider vinegar
2/3 cup oil – something neutral like safflower or canola
2 tsp vanilla
2 cups cold water

Mix dry ingredients together in large bowl. Add wet ingredients to bowl & stir well. Pour into an ungreased 9x12 pan & bake at 350° for 35-40 minutes.

Peanut Butter Frosting

1/2 stick margarine – room temp (Earth Balance is vegan.)
3-4 tblsp creamy peanut butter
3 tsp cocoa powder
5-6 tsp soy milk
1 1/2 tsp vanilla extract
2 cups confectioners sugar

Combine the margarine, peanut butter, vanilla & 1 tblsp milk & whisk until smooth. Add the cocoa & mix well. Add sugar about ½ cup at a time, alternating between sugar and 1 tblsp milk. Keep adding the sugar/milk till all the sugar is gone. Frosting should be smooth & creamy.


on edit: Also, I recommend "Sinfully Vegan" for those with a sweet tooth or those who love to bake but have given up dairy & eggs. Oh my! This cookbook is a danger to your waistline!
