Veggie & Lentil Soup Recipe
I don't know who on DU this belongs to.

Like a ding-dong I copied the recipe but didn't save the
post/thread. It's in the archives and I can't get in there,
and I wanted to say a big huge Thank You, whoever you are.

I just made it and it turned out great.

(My keychain says, "My only domestic quality is that I
live in a house." I note this because the last time I cooked
raw food by myself was probably three years ago, and even I
couldn't screw it up.)

Which brings me to my lentil & veggie soup! Make a big pot of this on Sunday and you'll gladly drive past the drive-ins on your way home. Yummy, fast and cheap! In a heavy soup pot, sautee 1 cup each of finely chopped celery & onion with lots of garlic in some olive oil until it's translucent. Add about 8 cups of water and a small bag of rinsed lentils; bring to a boil, then add one cup each of diced potato and carrots. Turn the heat to low and simmer for 25 minutes; then add 2 cups of chopped spinach, salt, and pepper & cook 5 more minutes.

3. It's not mine!

I stole it from somebody here on DU, and now I can't find
out who it was. The thread's not here, and it's not in the
Lounge or the Cooking group either.

I was hoping the person was here and would recognize their
work.

I'll be eating on this soup for a week. It's fantastic.
Course I don't know how much garlic is too much garlic.
I used five little sections. Seems about right.

I remember when I posted it somebody said something like "that so-called healthy meal would KILL ME!" So I'm glad you liked it and even more glad you lived to tell the story. LOL!

5. I'm so glad you found this thread.

I'd been wanted to start eating some more whole
foods, you know, less processed, more substance,
and this recipe seemed a perfect one to start out on.
Simple, quick, CHEAP.

I cook pretty much every night, living as I do with ravenous beasts who daily ask that dreaded question, "Mom, what's for dinner?"

Anyhow what I love to do is make a double batch of lentil soup (or split pea soup, black bean soup, chili, or chowder,) and freeze half of it in ice cube trays.

Then you can take the resulting ice cube food, and put them zip-lock bags in the freezer, label & date the bags with a magic marker and then, you can take them out for individual servings as needed.

I like to put them in a bowl in the fridge in the morning to thaw, and then just heat them up later in the day. But you can microwave it on defrost & then heat it on high if you're in a rush.

What I really can't tolerate anymore is canned soup -- it's slimy and expensive, and tastes like metal! The frozen soup is great though, you can't tell the difference between it and the fresh pot. Also great for homemade tomato sauce.
