Masterpiece Born Out Of Desperation
Don't you love it when you throw something together out of desperation and it ends up going over like gangbusters??

Running around getting everything ready for Thurs dinner, had no clue what to make for TONIGHT's dinner.

Had a spinach salad from Costco in the fridge that I meant to have for lunch today but got too busy. They're HUGE and basically I just threw the whole salad in a hot skillet with some sliced garlic and olive oil. Left out the bacon because my daughter doesn't eat it but it would have been good I think!

So basically spinach, mushrooms, cherry tomatoes (quartered) and grated cheese go in the skillet and I boiled up some ravioli that was in the back of the freezer, drained it and put it in a bowl....poured the ex-Costco spinach salad, now nicely wilted on top of it, crossed my fingers and got raves...RAVES! NO KIDDING this was really good!

What's your favorite accidental masterpiece?

1. I studied at the Culinary Institute of America .......
..... back in the old days when it was in New Haven, CT. We did a potato souffle (think Vichysoise in souffle form) that absolutely bombed. Flatter'n a tortilla.

Each class that was in a kitchen served their production to classes in related subjects and featured that day's successes.

My souffle was the day's feature ..... as "French Potato Crepes"

They were the hit of the day!

4. That Costco Spinach Salad Is Really Good....
The only thing is I don't like the sticky/sweet poppyseed dressing -- I usually just throw some olive oil & lemon juice on it.

Never cooked it before though!

5. I made salsa one time.
Some combination of canned tomatoes/peppers, fresh tomatoes, sauteed onions, and some spices I had lying around. Unfortunately, I didn't pay much attention to what all I threw together, because my wife loved it and I've never been able to make it again. :-(
