Two of my favorite cooking secrets
for casserole dishes--if the recipe calls for milk, I use sour cream or french onion dip, esp. for casseroles.

for desserts, esp. my favorites, pies (sweet potato, custard) and bread pudding, a knife tip of cayenne pepper puts some zing into it.

I never would have thought of that! I have put sour cream in casseroles. Just started adding buttermilk to mashed potaoes instead of milk for a little zing. I also just read to add 1 tsp vanilla to a tub of frozen whipped topping to make it taste freshly whipped. (I haven't tried it yet)

2. try this with your potatoes
Put a little bit of horseradish in the mashed tatoes. I use butter, sour cream and horseradish, but buttermilk would work, too. It's just delicious. I don't always do it, just sometimes.
