Osso Buco
I've never made it, or eaten it - just have heard about it.

In the grocery store yesterday I saw it on the shelf - labeled for it - it looked like lamb joints (I guess that's what it is), but looking at the "cooking instructions" they print, they advocate cooking it for 2 or 3 HOURS. The stuff looks like it'd be done within 20 mins.

As I said, I don't know anything about it, but what's up with Osso Buco?

1. Veal shanks. It's a tough cut of meat and needs to be

Truly, one of the best things you can fix.

And then, the marrow inside the bones. Ahhhhhhh................

Oh, man, what a treat it all is.

There are a zillion recipes for it, so if you go looking, make sure you find one that includes "gremolata". That's the final touch.

3. First time I made this was when I was in school
Back then, the CIA taught all the old fashioned, now much out of favor classics. Osso Bucco was one of them.

To die for when done right. So tough you need to eat toothpicks when its bad.

Essentially, it is veal stew.
