8. Cassoulet du canard
I made it Sunday, it made enough for 10 people, which is fine, because it took 4 hours to make. So we are having it again tonight.

9. I made some lima bean soup tonight.
So easy.

2 bags lima beans
2 cans chicken broth
2 ham hocks, smoked and cooked
1 onion, chopped
2 cups chopped celery
5 carrots

Wash & rinse the lima beans.
Place in pot with the ham hocks and chopped onion. Cover with water and chicken broth. Bring up to boil, reduce heat and simmer for about an hour, stirring occasionally. Add celery and carrots, cook for an additional 20 minutes.

Serve with a green salad, and french bread or cornbread.

11. I eat light at supper
so I am having a vegetarian sandwich. Two slices of 9 grain bread toasted, thin slices of carrots, thin slices of onions, avacado slices, cucumber slices, tomato slices, spread one of the breads with veggie cream cheese, maybe some pickles and top with lettuce or sprouts. Healthy and tasty!
