white beans with lamb....
What to do with one leftover lamb shoulder chop and clinging cooked cabbage? Here's what I threw together-- I can't say whether it's any good yet, because I want to let it simmer for an hour or so:

2 shallots, chopped
1 glove garlic, chopped
1 dirty saute pan, left over from breakfast
1 leftover braised lamb shoulder chop, with clinging bits of assorted vegetation
1 15 oz can white beans
1 small potato, cut into 1/4 dice
1 cup chicken stock
1/2 cup water
1 tbsp fresh thyme leaves, minced
1 bay leaf
1 tbsp balsamic vinegar
1/2 tsp hot paprika
pinch of Montreal steak seasoning

Saute the shallots and garlic in the leftover bacon fat in the dirty saute pan. Pick the lamb from the bones and shred the meat. Combine with all the other ingredients in a covered saucepan, including the shallots and garlic. Cover and simmer for 1 hour, reducing the liquid until the beans are creamy.

2. Lamb and beans just seem to go together.
One of the best throw together things I ever made was lentil soup simmered with a lamb bone left over from christmas dinner. My in-laws still talk about that meal. Not the leg of lamb from the fancy xmas meal, but the soup I made to use up the left overs :rofl:

4. The leg of lamb WAS lovely.
Actually, my cooking scares the in-laws a little. I refuse to cook meat to well done, so they are always certain we are all going to die of salmonella or some other food borne disease. Me on the other had, I would rather die than eat well done meat. In their view, at least the soup was sterile :) And the soup was fabulous. I buy my lamb at Costco now, and it doesn't come on the bone, so I have never been able to duplicate the soup 'cause I never have the bone left over :(

5. I have a theory about that
here it is, check out your friends and family and tell me what you think

some people have very sharp "eyeteeth" (the ones just outside the middle front four) and those folks with sharp eyeteeth (as a general rule I've noticed) like their meat RARE! rip it and rend it yanno?



other folks have very flat eyeteeth and they tend to want the taste all cooked out of the meat, cooked til it almost doesn't resemble meat or they are vegetarians




it's a pet theory of mine, what do you think?

6. I have very flat eye teeth.
But I may have ground them down due to bad habits in my youth, so it doesn't necessarily conflict with your theory.

My husband likes his meat cooked hard, but since that is how his mother cooks, it is no surprise. I will check his eye teeth later, report back on my findings.

7. Sounds great
Had a lamb dish recently in a restarant and then went back and had it again two days later.

Lamb shank, braised with couscous, dried apricots, raisins and prunes. Melted in the mouth and made you want MORE!!!!
