Sparkling Beet Cups---For those scratching their heads.
NO, I will not be making these.....Although I love beets ----I have found my limit in my quest for retro food.



SPARKLING BEET CUP

1 lg. can sliced beets, cut shoestring style
1 pkg. lemon Jello (sm.)
1/4 c. sugar
1/4 c. vinegar
1 tbsp. hot horseradish

Bring 1 1/2 cups beet juice plus water to boil. Dissolve Jello in hot juice. Add other items and pour into molds. Serves 6.

3. I am very uncertain about the lemon jello.
Other than that, it does not sound horrid if you like beets. Maybe plain gelatin and lemon juice instead of the jello and cut back on the sugar a little?

4. Do you remember Celery flavored jello?
I'm showing my age here but they use to make it. I think that might not be so bad with this. I wonder if you could make something similar with juicing some celery and using knox. I don't have a juicer......mmmmmmmmmmmm

11. Come now, it's not so bad!
If you like beets, that is. I was thinking, add some chopped walnuts for a nice crunch....... Might even be good. :)

What was up with the gelatin obsession? Was gelatin a newly discovered substance or something?

12. I do like beets, but...
I think the gelatin is putting me off big-time. Here's a thought; create something from "that" that is springish instead of Christmassy. What veg would turn gelatin green, asparagus or artichoke hearts moussed?:rofl: OR better yet, lime jello? Change out the X-massy stuff for spring berries, etc.?
I dunno; sounds like a lot of work for something I probably wouldn't eat. :)

If you wait till summer to make it, you can use nasturtium blossoms for the garnish, yum!

on edit: Put avocado jello cubes in gazpacho..... Help me, I think I just went over the edge! I have this sudden urge to dress in heels and pearls while I vacuum the drapes. :o

14. Beets are one of my favorite salads---
Just cube the beets, wash off the color, cube banana, same size, and add mayonnaise. Makes a sweet salad -so delicious.

15. That actually sounds good
I make a salad of raw shredded beets, fennel, and jicama served in a vinaigrette flavored with orange zest. It's very refreshing and crunchy. I use yellow and red beets. It's a colorful blend but you can't mix it too much or the beets will run.

16. The Joys of Jello
We found that booklet of recipes at my hubby's uncles home. I have to wait to get home to Colorado to scan some of its treasures. Some cool photographs and icky recipes to barf by.

19. There's an orange-pineapple sherbert recipe
You first make this milk sherbert recipe in the book and then do a substitute of some ingredients to make it the o-p version. It doesn't call for fruit sections added but I think it could be done. The recipe does call for pineapple juice.

How about "Barbecue Salad" where you make gelatin cubes that have tomato juice 'n Worcestershire Sauce in them? And the photo is in black & white. Oh yum.

The one recipe I do want to try is to make marzipan with the jello powder. The fruits are very cute and it looks easy.

The trip is fine. Funny thing is that no sooner do we get to a new place that the weather goes to crap. Yesterday it was gorgeous driving from Bradenton to the Fort Myers area. And it was lovely this morning. Now the clouds have rolled in and the wind is whipping the palm trees around. But that's the shore. I should remember this from growing up in NYC. "Mommy can we still got to the beach? Maybe it's not cloudy there." "No honey. It's only a few miles away and these clouds are everywhere."

Please tell me it isn't so. Do they turn brown as the avocado oxidizes--or does whatever it does if you don't add lime or lemon juice?
