So, who's having Leftover Smorgasboard today?
Me me me!

I have, in my fridge right now, some leftover New Years meatballs (on their last day), a few slices of pork, lots of rice, and one ball of pizza dough (plus sauce, cheese and pepperoni, and maybe some olives or peppers). We were gonna do this last night, but we ended up going out and celebrating instead (it was a banner day for SO and me both).

How about you?

1. I have some leftover rice and
leftover baked chicken. I think I will probably make a chicken a la king because its mostly white meat and my honey doesn't really care for it unless its got some kind of sauce. I am open to ideas of something else if anyone has any.

2. Ham
I sliced as much as I could off the ham we had then used the remains to make a pot of split pea soup. It's so damp and chilly outside the soup warms the innards very nicely.

I chopped up the slices to freeze until next week. Then we'll have creamy bean soup. I love soup season. :)

3. That was last night...
I cook specifically to minimize leftovers (or to use them in a planned fashion) because I'm random about eating them and DH will eat anything that doesn't slap him when he sticks a fork in it -- thus meaning that leftovers are a recipe for food poisoning in this house and I have better things to do than deal with a sick or dead husband.

So last night we had the second day's worth of green chili chicken. Tonight is meatball calzones (made with meatballs premade and frozen last week), salads and fruit. (The last 3 servings of the green chili went into the freezer to be layered with cheese, more chiles, tortillas and sour cream in chilaquiles in two weeks.)

Tomorrow is au gratin potatoes baked with smoked sausage and broccoli.

4. not us, DH is finally got an appetite poor baby
so i made pork chops, mashed taters and corn with my homemade bread (toasted)

TOMORROW i'll use the left over pork chops for something.... any suggestions?

5. We've been doing this every other day, it seems ......
I have a bunch of leftovers sucked and frozen. The food save sucker makes reheating a piece of cake.

7. Leftover lettuce, soup and potatoes
I've got a lot of leftover romaine, so I'm broiling a couple heads of that in seasoned olive oil. I've got leftover broth from Christmas turkey, which I've been faithfull boiling every three days so it doesn't go bad. Tonight I'll do some leftover spuds and other veggies in it for a soup.

And I'm starting a new spiral ham tonight because it was on sale (probably the store's holiday leftovers), so that will become dinenr in various forms for the next few days.

8. I ran across a great lettuce
recipe that we used to use a fair amount in the olden days--
Keema and Lettuce Curry

Ground meat--could be beef, chicken or turkey.
Head of lettuce
One minced onion
2 cloves minced garlic
2 large tomatoes
1 dessertspoon ground coriander
1.2 t. each: tumeric, ground ginger, cumin, ground chilis

Fry onion and garlic in oil till golden. Add quartered tomastoes andground spices. Mix thoroughly. Cook 5-7 minutes. Add ground meat.
Shred lettuce, add to curry. Simmer 10 minutes.
Serve w/ rice.

10. The lettuce
cooks down, so I wouldn't liken it to taco salad, but I must say, I do like it with poppadams which are kind of like taco chips when you break up them up after frying them. I also suggest serving this either with plain yogurt or a raita--yogurt with cucumber and mustard seeds or any other raita that suits your tastebuds.
